Jumex mango juice8/27/2023 ![]() It has just a slight mango flavor, there is a decent aroma, but not much to taste. For a 5 gallon batch, I use 40oz of puréed fresh mango, 32oz of mango juice in secondary, and 16oz of juice at bottling. I have found in beer at least that it is very difficult to get much mango flavor, the yeast just eats the bejesus out of mango. I call it the Angry Mango, a mango habanero IPA with citra and centennial hops. Not in a mead, but I use it regularly in the secondary and at bottling for one of my more successful beers. Once frozen, it's ready to use, with or without sulfites, depending on your yeast and comfort level. That'll help break down cell walls, leading to a better extraction of fruit goodness into your mead. If they tasted divine, I'd get all the parts I want to add to my mead (hint, I'd remove the seed and skin), put it in a bag, and freeze it. I'd go find me some mangoes, and eat me some mangoes. Why use juice blends, when I can source single-fruit juices and blend them myself to make them exactly what I want? Why use juice with sugar added, when I can add my own sugars via honey? Whatever sugar they used won't taste nearly as good fermented out. If it has more than one ingredient, I won't use it. When using a juice of any sort, look at the label closely. That's preferable in my mind to allowing someone else to make up some juice from concentrate (typically adding preservatives) then selling it to you. ![]() If you want to use concentrates in your mead, go ahead, use concentrates. You can overcome this, but I would not recommend trying unless you're quite experienced. There are some you can work around, but many/most of them are made intentionally to inhibit the yeast budding process, making your ferment almost sure to get stuck. If it doesn't taste great, putting it in your mead will not make it taste better somehow. Blueberry juice, or blueberries? Blueberries! Use your taste buds, they'll tell you more than some folks on a forum ever could. The freshest, most pure ingredients you can get your hands on.
